Our cod is sourced from clean, cold waters of the north Atlantic. Fillets have a silvery, subcutaneous layer which distinguishes them from Pacific cod. The meat is lean, has a mild, clean flavor and large flakes. Raw Atlantic cod is translucent, ranging from whitish to pinkish; once cooked, it becomes snow-white, while its texture becomes both firm and tender.
Wild cod is rich in nutrients. It is low in calories and fat, while high in protein. Atlantic cod contains large amounts of vitamins B6 and B12, A, C, and E; as well as phosphorus, potassium, and selenium. In general, cod is considered safe for pregnant women to consume.
Atlantic cod is very lean so it cooks quickly. It is ideal for broiling, baking, and steaming. The neutral flavour goes well with herbal accents like tarragon, dill and cilantro.
