They have a mild, slightly sweet flavour, and a softer texture than other shrimp species. Similarly to our Greenland shrimps, black tigers are rich in nutrients. They are excellent raw or grilled on skewers. They go well with pastas or in casseroles, as they can easily withstand tossing with other ingredients. Can be cooked in shells or peeled.
Yellowfin has a uniquely mild, meaty flavour. It is a great source of vitamins and antioxidants. Also, yellowfin tuna is rich in protein and low in calories – its consumption extends the effect of satiety and therefore facilitates losing weight. It is suitable for grilling, broiling, or baking. Tuna requires only little flavour enhancement, you can brush it with olive oil and sprinkle with seasoning. One may also marinate it for a couple of hours before cooking – try a marinade of white wine, brown sugar and a bit of olive oil.
